Slow-Baked Tomatoes

During winter, most of the tomatoes that are available in the shops are hard and flavourless. By simply slowly baking them in the oven at low temperature, their flavour concentrates wonderfully, while leaving them succulent. Use these cold in sandwiches or wraps, warm as a side vegetable, or a tasty addition to a vegetable lasagne.

tomatoes 10 Slice in half & remove any hard core. Place, cut side up, on greaseproof paper in an oven proof dish.
     
fresh rosemary 1 sprig Push rosemary leaves into cut side of tomatoes. Scatter garlic on tomatoes, and drizzle lightly with oil. Sprinkle with black pepper. Bake in oven at 130deg C for about 2 hours.
garlic, chopped 1 clove
olive oil a drizzle
black pepper
