North African Bean Soup

Bean Soup

This creamy bean soup is packed with an amazing flavour, yet is so simple to make.

broad beans, tinned, drained and rinsed 390g Place in a large saucepan, bring to the boil and simmer, covered for 45 minutes. Liquidise the soup to form a smooth, thin cream, and return to the pan. Reheat in pan if necessary, stirring.
garlic, peeled 4 cloves
water 1 litre
olive oil 2 Tbsp
     
lemon juice from 1 lemon Add the lemon juice to the soup and stir.
     
    Serve hot, topped with cayenne powder, ground cumin, sliced spring onions, diced tomatoes or lemon.
     
Serves 4
