Christmas Cake

This moist, light, fruit cake recipe is perfect for Christmas or other celebration. The recipe is vegan, dairy free, egg free and nut free. To make it soya free, use a non-soya margarine and non-dairy milk other than soya (such as rice milk).

self raising flour 340g In a large mixing bowl, rub the margarine into the flour.
vegan margarine 170g
     
mixed dried fruits 250g Add the dried fruit and sugar and mix with a fork.
glace cherries, quartered 50g
granulated sugar 215g
     
freshly boiled water 3 Tbsp Place the hot and cold water in a blender and add the seeds. Blend until a thick gloopy consistency is achieved. Add to the rest of the mixture in the bowl.
cold water 3 Tbsp
linseeds (flaxseeds) 2.5 dstsp
     
     
soya milk 7.5 Tbsp Add to the mixing bowl (you can use this to rinse out the blender if you like) and mix well into the other ingredients.
     
    Place the mixture into a lined 7.5" cake tin. Bake at 160deg C in a preheated oven for about 75 minutes, or until a sharp knife inserted into the cake comes out clean.
