This moist, light, fruit
cake recipe is perfect for Christmas or other celebration. The recipe
is vegan, dairy free, egg free and nut free. To make it soya free,
use a non-soya margarine and non-dairy milk other than soya (such as
rice milk). |

In a large mixing bowl, rub the margarine into the
flour. |

Add the dried fruit and sugar and mix with a fork. |

Place the hot and cold water in a blender and add the seeds. Blend
until a thick gloopy consistency is achieved. Add to the rest of
the mixture in the bowl. |

Add to the mixing bowl (you can use this to rinse out the blender
if you like) and mix well into the other ingredients. |

Place the mixture into a lined 7.5" cake tin. Bake

160deg
C
in a preheated oven for
about 75 minutes, or until a sharp knife inserted into the cake comes
out clean. |
