Rich Chocolate Mousse

A rich, and wonderfully decadent, chocolate mousse, that is so simple to make.

Ingredient

Procedure

     
firm silken tofu 350g

Blend to a smooth consistency with a stick blender.

     
caster sugar 2 Tbsp Add to the tofu and blend again until smooth and mixed in.
tinned peach slices in juice 4 slices
     
dark vegan chocolate 100g Melt the chocolate in a bowl over a pan of boiling water. Add the molten chocolate to the tofu and blend well to mix.
     
    Place in small serving bowls and leave for several hours in the fridge to chill.
   
     
    Serve decorated with raspberries or mint leaves.
