Avocado and Clementine Salad

 

A light salad, which contrasts the
creaminess of the avocado with zesty citrus.
Great as a starter or side dish.

Ingredient

avocado, small 2

Peel and slice the avocado and place in a mixing bowl.

clementine 1 Peel the clementine and separate the segments. If preferred, remove the fibrous coating from each segment. Add the segments to the avocado.
spring onion 3 Finely slice the spring onions and add to the bowl.
     
lemon juice 3 Tbsp Mix these ingredients together in a cup or jar to form the dressing. Pour over the avocado, clementine and onions and mix gently by hand.
soy sauce 1 tsp
walnut oil 1 Tbsp
ground ginger generous pinch
     
    Serve on a bed of mixed salad leaves, and sprinkle with slivered almonds.
     
    Serves 4
