Avocado and Clementine Salad |

A light salad, which contrasts
the
creaminess
of the avocado with zesty citrus.
Great as a starter
or side dish.

Peel and slice the avocado and place in a mixing bowl.

clementine |

Peel the clementine and separate the segments. If preferred, remove
the fibrous coating from each segment. Add the segments to the avocado. |
spring onion |

Finely slice the spring onions and add to the bowl. |

Mix these ingredients together in a cup or jar to form
the dressing. Pour over the avocado, clementine and onions and mix
gently
by hand. |

walnut oil |
1 Tbsp |
ground ginger |

Serve on a bed of mixed salad leaves, and sprinkle with slivered
almonds. |
