Foul Medammas Pitta

This is based on a traditional Egyptian labourers' breakfast, but is great as a hearty snack any time of the day. Foul medammas can be found canned in Middle Eastern groceries, but if you can't find them, canned pinto beans make a good alternative.

Ingredient

foul medammas (fava beans), canned, rinsed and drained 300g

Place the beans and water in a small saucepan, and heat gently until warmed through.

water 2 Tbsp
     
spring onion, finely sliced 2 Add to the pan and mix. Heat, with stirring, until vegetables warmed through.
lime, juiced 1
tomato, diced 2
olive oil 1 Tbsp
red pepper, 5mm diced half
ground cumin 1 tsp
ground red chilli 0.25 tsp
ground dried coriander 0.5 tsp
garlic, crushed 1 clove
     
pitta pockets 4 Toast and fill each pocket with a quarter of the bean mix to serve.
     
    For a slightly richer variation, top the pitta pocket with grated soya cheese, vegan sour cream, or natural soya yoghurt.
     
    Serves 4
