Date and Banana Cake

This is a quick and easy baked treat. It is moist and satisfying, and a great way to use up overripe bananas. The cake freezes well, too.

Procedure

     
soya flour 1 Tbsp Sift together into a bowl.
self raising flour 150g  
baking powder 1 tsp  
ground cinnamon 0.25 tsp  
ground ginger 0.25 tsp  
     
dried dates, finely chopped 90g Add to the flour and mix.
     
soya milk 75g Lightly whisk together to mix.
rapeseed oil 70g  
     
bananas 2 medium Mash well in a large bowl.
     
unrefined granulated sugar 115g Add the sugar and about half of the milk/oil mixture to the bananas, whisking to mix. Add to the flour and dates, mixing well. Then add the rest of the milk/oil mixture.
     
    Pour the mixture into a lightly oiled loaf tin. Bake at 170degC for 50-55 minutes, until a browned on top, and a knife inserted into the cake comes out clean.
     
    Allow to cool in tin for 10-15 minutes, before turning onto a wire rack to cool fully.
